We planted our first vines on our land in 2009, and our inaugural bottles of wine were sold in 2013. Today, our small 3-hectare estate in UNESCO’s Charlevoix Biosphere Reserve boasts approximately 10,000 mature organic-certified vine plants. In July 2022, we added 5,000 new plants, bringing our total to 15,000. Adhering to circular economy principles, our distillery recycles and distills whey from our cheese production and grape pomace to craft high-quality agricultural spirits. We have been recycling grape pomace since 2016 and selling these spirits since 2017. We began distilling whey in 2017 and selling these spirits in 2020.
